These Light Lemon Blueberry Donuts were acceptable but not worth the time. I hate when recipes don’t work out, I get so disappointed.
These we’re bland and missing something. I could tell that they are low fat, and that isn’t ok in my book. They we’re also rather ugly because the blueberries made them purple. The discoloration is probably my fault because I used frozen blueberries instead of fresh, but it’s winter in New England so I worked with what I had. If I liked them enough to try again I would probably use vanilla flavored yogurt, loads more lemon and make a glaze as a topping instead of just dipping them in sugar.
