For the longest time we’ve been buying turkey meatballs from the grocery store but I finally decided to give it a shot myself. I formed these with a small to medium Pampered Chef Cookie scoop and then baked them in a mini muffin tin and they came out awesome!
- 1 package of lean ground turkey (around 1.3 pounds)
- ½ cup seasoned whole wheat breadcrumbs
- 2 tablespoons ketchup
- 1 large egg
- 1 cup shredded zucchini, moisture squeezed out
- Salt to taste
Pre heat the oven to 375 degrees.
Mix all ingredients in a large bowl by hand and then scoop the mixture with the cookie scoop or a spoon and place in a well greased mini muffin tin (or on a cookie sheet). Bake for 10-15 minutes.
We loved how these came out and it ended up making about 28 meatballs which left us lots for lunches, snacks and another dinner. They’re rather healthy too coming out to 4 points plus for a serving of 5 meatballs.
